1000%! We just started with Huntress and this was one of the first things I wanted to configure. I was disappointed to find that configuring email of incidents at the organization level isn't an option. This will slow us being able to sell Huntress to other customers.

This would be a very useful addition for MSP's to be able to direct things directly to in house IT (co-managed agreements) or those end customers of ours that for whatever reason we don't have a PSA/RMM integration.
